Sweet Ginger-Dijon Dressing

Just sharing this with you before salad season begins. Spring is just around the corner!

I drizzled it over a simple tomato, avocado and cucumber salad.

Makes: 2 serves

Preparation: 3 minutes

Ingredients:

  • 45 grams light olive oil
  • 35 grams water
  • 15 grams apple-cider vinegar
  • 40 grams ginger, peeled, sliced
  • 30 grams Dijon mustard
  • 1 large Medjool date
  • Pinch of salt & pepper

Method:

  1. Blend 35 seconds, speed 9.
