Blueberry & Watermelon Ice Pops

Makes: 6

Preparation: 3 minutes + cooling/freezing time

Ingredients:

  • 2 chamomile teabags
  • 155 grams boiling water
  • 20 grams honey
  • 320 grams watermelon
  • 20 grams lemon juice
  • 36 blueberries

Method:

  1. Steep teabags in boiling water.
  2. Remove teabags and add honey to tea and allow to cool.
  3. Add watermelon to bowl and blend 10 seconds, speed 9.
  4. Pass watermelon through fine sieve, add tea and lemon juice. Stir thoroughly.
  5. Pour mixture into 6 moulds, leaving 1 cm empty.
  6. Add 6 blueberries to each pop and freeze for 6 hours.

Tips:

You can use orange or lime juice as an alternative to lemon juice. Additonally, you can swap other berries of your choice instead of blueberries. I purchased my silicone ice cream moulds from one of my favourite recipe developers, alycealexandra.com.
